There's no question that honey mustard is a delicious condiment that goes well on nearly everything: chicken, ham, potatoes, salads, pork skewers (we'll get to that) or even as a delicious dip. But we have just the ingredients to make it better! A little spice in your honey plus some gourmet Dijon mustard will really make your taste buds go wild. On top of that, though, the satisfaction of making the honey mustard yourself plus knowing you're supporting small-batch artisans in the process makes for a delightfully well-rounded meal. Without further ado, here is a recipe for Hot Honey Mustard Pork Skewers, courtesy of Mike's Hot Honey themselves!
1/4 c. Mike's Hot Honey
1 tbsp. olive oil
1/4 c. Pommery Dijon Mustard
1 pork tenderloin (1.5 pounds)
2 bell peppers (any color)
Soak 8 skewers in cold water for 20 minutes. While they are soaking, prepare the hot honey mustard: stir together hot honey, olive oil, and Dijon mustard in a large bowl until smooth. Cut the pork into 1-inch cubes and toss with the mixture until well-coated. Set aside.
Preheat broiler to high and cover a broiling pan with foil (or heat up your grill to high). Cut up your 2 bell peppers into 1-inch squares. Divide peppers and pork into 8 equal portions then begin skewering, alternating between them. Season with salt and pepper, then broil (or grill) for 10 to 15 minutes, rotating often. Serve once cooked through and slightly brown
