After 12 years spent breeding several species of salmonids on one of the oldest organic fish farms in France (certified since 2002), François Isambert came up with the idea of producing trout, small fish entirely labelled AB, in order to launch on the market high quality canned trout from France that are raised in organic aquaculture and are processed completely by hand without prior freezing. He then joined forces with Ilias Zinsstag and Laurent Despeyroux to create SAS La Truitelle in 2020. Trout raised are rainbow trout (Oncorhynchus mykiss) aged at least 8 months and weighing about 15 g. They are raised in absolute respect of the organic aquaculture charter and are processed completely by hand, without prior freezing.
